Trying new things… again…
I love Chinese food. I’m just going to put it out there… I miss fried rice, crab rangoon, scallion pancakes, wonton soup… Yeah.
But, one thing I’ve never loved is egg drop soup. It always tasted like weak chicken broth with some snot in it for texture. Seriously, if you’ve ordered it, you know what I mean.
Anyway, tonight I was craving something different, warm (it was only 37* here today!), and comforting. For some reason, my brain landed on egg drop soup, even though I detest the stuff. I gave myself a pep-talk: “It’s just scrambled egg (which we love) in chicken broth (which we love), complimented by veggies (which we love)! It simply MUST be good!!”. Okay, so here we go.
So, I made the stuff up; I used a tiny bit of cornstarch, but I don’t think it improved my egg-drop-soup experience at all; this stuff would be awesome without it, just thinner. I made a base broth with ginger, lemon grass, and leeks, and opted to add baby bok choy and mushrooms for some awesome color and flavour. The soup base was freaking incredible and would lend itself to all kinds of uses (stay tuned).
Try it. I promise, it will not activate your gag reflexes. But, if it does, I do apologize and hope you find a soup that works for you!
