Sunflower Seed Crackers

These crackers are a great transport device for cheese, dips, and spreads; they're also really good on their own.

If you’re watching your carb and sugar intake but missing have a good cracker in the house… this low carb sunflower seed crackers recipe gives you a great option!  The recipe comes from Maria Mind Body Health (with the modification of added seasoning if desired) and is simple, fast, and delicious!

Preheat oven to 325*F.

Put the sunflower seeds into a food processor or blender and pulse until they become a fine meal (or as fine as they'll get).

Add in Parmesan and water and continue to pulse until a somewhat sticky "dough" forms. Taste a bit & add salt & pepper to taste. **You could also improvise and add any other herb or seasoning that you like**

Turn dough out onto a piece of parchment paper or a Silpat and place another piece of parchment paper on top. Roll the dough as thin as you can get it - I laid a few long lollipop sticks along each side and ran my rolling pin on top of them to get the dough very thin (1/8" or so) and even.

Once the dough is rolled out, use a pizza cutter to cut them into whatever shape you'd like. Pick up the dough (including the parchment/silpat) and put it on a baking sheet.

Determine if you want anything else on top of your crackers, like extra sunflower seeds or some parmesan cheese (or both or something completely different). Sprinkle it on and gently press into the crackers.

Put the pan in the oven and bake for 25 - 30 minutes. Remove pan and gently break the crackers along the lines you cut earlier. Allow to cool & store them in an airtight container.
