Spicy Stuffed Avocado

This easy recipe for spicy stuffed avocado is packed with nutrition and comes together quickly; great for a fast dinner or hearty breakfast.

Directions

This very simple low carb, keto-friendly spicy stuffed avocado recipe is great for those night when you don’t really feel like cooking but want something hearty, satisfying, and quick to throw together.  It is also quite good for breakfast!

Preheat oven to 350*F, with one rack in the normal baking position and another in the broil position.

Slice your avocados lengthwise, gently twist them open, and remove the pit. Using a spoon, carefully remove some of the avocado pulp, leaving about 1/4 inch all over. Take the pulp and chop it into 1/4" pieces of smaller.

In a bowl, mix together avocado pieces, cheese, and spinach. Salt & pepper to taste.

Carefully mound 1/4 of the spinach mixture into each avocado half and place on baking sheet. Place in oven and cook for 15 minutes.

Turn oven to broil and cook for another 1-3 minutes; don't walk away during this time!! Keep a close eye on these babies as broiling can turn to burning in a quick minute.

Once the tops are browned and the cheese is bubbly, remove from oven and serve immediately.
