Ingredients

2 TBLS Butter
1/3 cup White Onion, diced fine
1 stalk Celery, diced fine
2 each Scallion, chopped
1 TBLS Garlic, diced fine
1 TBLS Flour
1 1/4 cups Chicken Broth
2 each Bay Leaves
1 cup Milk
1 tsp Ketchup
1/2 tsp Tomato Paste
1/2 tsp Paprika
1/4 tsp Cayenne Pepper
pinch Nutmeg
pinch Cloves
1/4 cup Heavy Cream
1 tsp Hot Sauce
Salt & Pepper, to taste
1/2 lb Crab Meat
1 TBLS Dry Sherry

Directions

This recipe for spicy crab bisque is hearty, satisfying, and delicious, with just a hint of heat for a little kick.  Feel free to increase the amount of hot sauce to suit your tastes.  If you prep all your ingredients ahead of time, this spicy crab bisque comes together in under 30 minutes!  Don’t be intimidated by the long ingredient list; a lot of them are just spices!

In a heavy bottomed stock pot, melt butter over med-low heat and add onion, celery, scallions and garlic. Saute until veggies are soft (about 5 minutes).

Stir in flour and cook, stirring constantly for about a minute. Whisk in chicken broth and stir until there are no lumps of flour left.

Bring to gentle boil over medium heat. Add bay leaves & allow to reduce for 10 - 15 minutes, until thickened, stirring frequently.

Add all ingredients from milk to hot sauce and bring to simmer. Taste & then add salt, pepper, and more hot sauce to your liking. Simmer for 5 minutes, stirring frequently.

Right before serving, stir in crab meat (leave some for the center of your bowl if you're aiming to impress) and let heat for 1 - 2 minutes.

To serve, spoon bisque into a bowl. Place a small pile of crab meat in the center. Take a cap-ful of sherry and pour it into the soup around the center crab meat. Serve immediately, with oyster crackers if you're so inclined.
