Pasta Dough Recipe

This simple, three ingredient pasta dough is as versatile as it is delicious.

Directions

Fresh pasta, like fresh bread, is a pain to make by hand.  Literally.  The endless kneading.  And kneading.  And still more kneading.  But, boy is it worth it.  You end up with a soft, smooth texture with great mouth feel when it’s cooked; firm, delicious, and just right for any kind of sauce or filling you might throw at it.  This pasta dough recipe makes a great pasta that can be used for any kind of noodle or any kind of filled treat as well.

Sift the flour into a large bowl and make a well in the middle.

Add the 6 eggs and olive oil into the well. Using a fork, slowly whisk eggs and olive oil.

Gradually start pulling some of the flour into the mixture, mixing to incorporate each time. Once you can’t really “whisk” anymore because it’s too thick, dump the bowl out onto a floured surface and start gently kneading, adding a bit of flour to the dough every few turns.

At first, it’s going to be a lumpy, bumpy mess (see that lumpy pasta mess?). Keep working it. I will frequently coat my hands in olive oil (bonus: it’s super good for your skin) and work a bit more oil in that way. I find it helps with the elasticity of the pasta.

Anyway, you’ll be at this for a while. Usually, I’m kneading for about 10 minutes or so. Doesn't sound long, does it, reading it from your comfy chair & computer screen… You wait. You’ll feel the burn soon enough.

Eventually, I promise, it will magically come together into a smooth, elastic, and just wonderful ball of dough. Once you've achieved this delicious texture, you can either use it right away, or wrap it tightly in plastic wrap & refrigerate it. When you’re ready to use it, cut off a small piece (golf ball size), roll it out however you want it, and make whatever type of pasta your heart desires.
