Ingredients

1 block Extra Firm Tofu
Vegetable OIl
3 cloves Garlic
2 each Eggs
8 oz Rice Noodles
1 cup Broccolini
For the Sauce:
1 TBLS Sweet Soy Sauce
2 TBLS Oyster Sauce
2 tsp Soy Sauce
2 tsp Rice Wine Vinegar
2 tsp Sugar

Pad See Ew

A smoky, chewy, crunchy blend of noodles and tender broccolini in a delightfully rich Asian sauce.

Directions

Many moons ago, a good friend & I went to this little Thai restaurant in our little central GA town.  I tried a new dish called Pad See Ew; it was love at first bite.  Smoky, crunchy, chewy, warm, satisfying…  *be right back*

Okay, after a few more bites, I’m back!  Turns out, the little Thai restaurant closed… *sad*  So, if I wanted it again, I could either drive to the North side of Atlanta or I could learn to make it myself!  This recipe is typically made with chicken, but since I’m not a huge fan of the stuff, I chose to use tofu in my pad see ew.  I just love the texture it adds once it’s stir fried and crispy on the outside.

Steps

Place noodles in a bowl and cover with VERY hot, but not boiling, water. Let them soak for 30 minutes, drain & set aside. Prepare tofu (below) while they’re soaking.

Remove the tofu from the package, place on several paper towels with more paper towels on top, and put something heavy on top (I used a plate & my sugar container). Let it sit for 15 minutes so some of the extra moisture gets squeezed out. It will make the tofu a bit more firm & it will hold together beautifully when you cook it. After 15 minutes, cut the tofu into 1/2″ x 1″ pieces.

While tofu is pressing, mix together the sauce: add all the sauce ingredients to a small bowl and whisk to combine until the sugar is dissolved. Set aside.

Put your wok (or large saute pan) over high heat and add 2 TBLS oil. Once it’s good & hot, add the garlic & cook for a minute (it’ll brown pretty fast).

Add the tofu and cook until browned & crispy all over (~10 minutes). Remove tofu & garlic to a bowl and set aside.

Add another tablespoon of oil to the pan & pour in eggs. Scramble until cooked. Slide them to the side of the wok and add the noodles & sauce.

Cook the noodles until browned and the sauce is mostly gone. Make sure you let the noodles sit for a bit in the pan so they get slightly charred; it’s the secret to the signature smoky flavour of the dish!

Add the broccolini to the pan & toss to cook for 1 minute.

Add the tofu back in and cook for another 3 minutes, stirring occasionally. Remove the food into a bowl & serve immediately… Drop over from the sheer deliciousness.
