Low Carb Sausage Balls

These meaty, cheesy sausage balls are an easy way to add some flavor to any get together.

Directions

Just in time for Christmas, these low carb sausage balls are the perfect appetizer or snack for those of us who are trying to avoid all the sugar-laden treats that abound this time of year!  After I made them, I found that I like them even better than the doughy, Bisquick versions.  These are dense, meaty, cheesy…  let me just say that I had to bag them and get them into the fridge after I ate 7 of them because I was worried I was going to eat the rest!

Preheat your oven to 350*.

Put egg in a large bowl and beat by hand for a minute.

Add the rest of the ingredients and mix with hands to combine. Make sure all the ingredients are evenly distributed.

Roll the sausage mixture into 1" - 1.5" balls and place on a baking sheet; using a Silpat or parchment paper will help keep them from sticking.

Put into preheated oven and bake for 10 minutes. Remove sheet from oven, flip all the balls over (this means you get TWO crispy sides!) and put back in the oven for another 10 minutes. Check on them to make sure they're brown & golden. Serve immediately.
