1 cup Mexican Cheese Blend
1/2 cup Jalapeno Pepper
3 strips Bacon
1 each Egg
Salt & Pepper
Oil for Frying

Cheesy Bacon Jalapeno Poppers (low carb)

Little golden-fried balls of spicy, cheesy heaven.

Directions

Last weekend, after throwing a football with my son all afternoon, I was absolutely dying for some old fashioned jalapeno poppers; you know what I’m talking about.  Jalapenos stuffed with a mixture of cream cheese & cheddar, then battered and fried to a golden paradise.  Well, given that typical ‘batter’ is out for now, I had to improvise!  Plus, the idea of mixing, stuffing, battering (or breading), frying (or baking) just seemed like a lot at the time. I just wanted to eat.

My solution are delicious balls of jalapeno & cheddar goodness, with some bacon thrown in for good measure (because, bacon).  Worked beautifully, fried up awesomely, tasted amazing.  I think these would be amazing with my Avocado Ranch Dip, but I was too busy shoving them into my face to try.  Please forgive my awful fingernail polish; I’d spent the afternoon throwing a football to my 6 year old!

In a medium bowl, mix together almond flour and xanthan gum.

In smaller bowl, whisk together cream cheese & butter until combined (might require 20 seconds or so in microwave).

Add cream cheese mixture to dry ingredients & stir to combine.

Add cheese, peppers, bacon & egg and stir to combine. Add salt & pepper to taste.

Roll mixture into 1″ – 1.5″ balls and set on parchment paper.

Heat oil in fryer (or 2″ deep in heavy skillet). When oil reaches temp (~350*F), gently place 4-6 balls in and let cook until browned (3-4 minutes), stirring gently so they don’t settle to the bottom & disintegrate, causing untold anguish.

Once browned, remove from oil & place on a cooling rack set in a cake pan (to let oil drain) or onto folded paper towels on a plate.

Eat, with gusto, and rejoice in the cheesy awesomeness.
