10 each Tostada shells
3 each Chicken breasts
1 each Lime, juiced
3 TBLS Fajita seasoning
Vegetable oil
1 can Refried beans
1 tsp Garlic powder
1 tsp Onion powder
1/2 each Head of cabbage, shredded
2 each Tomatoes, diced
2 each Avocados, sliced
1 cup Queso blanco, crumbled
5 each Green onions, sliced
Salt and Pepper, to taste
To taste Ranch dressing (optional)

Fajita Chicken Tostadas

Fajita chicken tostadas are a delicious and healthy way to get extra fiber, protein, and healthy fat into your diet.

Once in a while I take pity on my poor family and cook them something that they can “carb out” on, like pasta or twice-baked potatoes or something along those lines and I will then have to make something completely separate for myself.  What I love about this recipe is that everyone else can eat it as intended (per the recipe), but I can leave out the tortilla and the beans, either serving it in a lettuce bowl or in a low carb tortilla and keep it keto.  This is a “little bowls” recipe (meaning lots of prep/ingredients), but the flavour is well worth it.



Place chicken into a pan of water (enough to cover breasts by 1 inch. Place over medium high heat and bring to gentle boil. Simmer chicken for 15 - 20 minutes, until internal temperature is 165 degrees. Remove from water.


This step is not necessary, but adds quite a bit of flavour. Rub chicken breasts with oil & sprinkle with extra fajita seasoning. Briefly sear each side until brown. Remove from heat and shred chicken. If you skip this step, just shred the chicken once it comes out the water.


Place shredded chicken in a large bowl and add fajita seasoning and 1 TBLS lime juice. Toss by hand to mix & set aside.


Put refried beans into a bowl and add garlic & onion powders. Stir well to combine. Taste and add salt & pepper if desired. Set aside.


Put shredded cabbage in a bowl & sprinkle with remaining lime juice and 1/2 tsp of salt; toss to coat. Set aside.


Take one tostada shell and spread 2 TBLS of refried bean mixture over one side. On top of that, add:

1/3 cup of the chicken mixture
1/3 cup of the cabbage mixture
2 TBLS diced tomato
1-2 TBLS ranch dressing
2 TBLS queso fresco
1 TBLS green onion
2-4 avocado slices

If you're eating low carb, simply omit the tostada shell & beans (or use them VERY sparingly) and layer the ingredients in a Romaine lettuce "bowl" or in a low-carb tortilla.
