Broiled Asparagus with Ham & Swiss

A simple and beautiful addition to any meal, this can also stand in as a main course.

Asparagus!  Does anything else scream Spring!! quite so loudly??  Here in GA, in early February, we live for this stuff.  Regardless, it’s October now and I recall when I found some perfectly bright green, super skinny asparagus at our local Kroger this weekend and I couldn’t resist.  **small secret**  I’ve been known to eat an entire bunch of this stuff in one sitting!  Steamed, roasted, raw… doesn’t much matter.  Generally speaking, I love simple, natural dishes, and this fits the bill perfectly.

Steam the asparagus for 2 – 4 minutes, depending on thickness. You still want it bright green & firm as it will cook longer under the broiler.

Remove from heat & run under cold water to stop the cooking process. Set aside.

Preheat your broiler & move your rack up to the ‘broil’ position; if you have a choice, Low is probably better. My oven is 60 years old, I just have the option of “Broil”.

Take one slice of ham and place a bunch of 5 – 10 (depending on thickness, again…) asparagus spears in the middle of ham slice. Lay one slice of the Swiss cheese on top of the asparagus & wrap the ham up, one side at a time, to make a little bundle. Use a toothpick to secure the ham. Place wrapped bundles either on cookie rack or directly on pan.

When they’re all rolled, slide the pan into the oven for anywhere from 2 – 6 minutes, depending on your broiler. You’re just looking for the ham to be browned and the cheese to be melted.

Remove from oven, serve immediately. Delight in all the wonderful, savory, Spring flavours! Let the asparagus consumption begin; as a friend of mine once said, “Stinky pee for everyone!!”.
