A hearty and surprisingly delicious soup that fills you up without weighing you down.

Directions

I present to you Broccoli & Blue Cheese Soup.  The basic recipe is courtesy of @rakowsketo on Instagram, with a few, very minor, changes.  This soup is simple, quick, and though it looks light enough, after one cup, I felt like I’d eaten an entire 5 course dinner.  Not sure I’ll be eating again today.

In a heavy pan over medium heat, sweat onion, garlic and celery in butter.

Add broccoli and chicken stock, cover and simmer until broccoli is tender.

Using an immersion blender or a regular blender, puree the soup (in batches if need be) and return to the stock pot.

Add in cheese, cream, and xanthan gum, whisking to combine. If soup is too thin for your taste, add a bit more xanthan gum, but don't go overboard or you'll end up with a somewhat gel-ish mouthfeel.
