I’m usually pretty good about meal planning. On Sunday, I sit down with my little note pad and I plan the week’s dinners, accounting for everyone’s tastes (the Buttercup doesn’t like meat, the Tornado doesn’t like veggies, etc.); we shop, we chop, we prep, we’re good. However, once in a while, I just don’t want to eat what’s on the “menu”. Like last Monday.
Lofty plans of baked chicken tenders, healthy veggies, and a fruit for dessert went right out the window. This Mama was craving crab.
Off to store we went, in search of crab meat and the ingredients to put together a savory & spicy crab bisque. If you’re lucky enough to live either a) close to the ocean where you can get fresh crab, or b) in a big enough city where you have a fish monger and can get fresh crab, yay for you! And I dislike you a little bit right now. Unfortunately, I live in neither so my choices are frozen crab legs or canned lump crab meat. Thankfully, I’ve had pretty good luck with Chicken of the Sea or Byrd lump crab [claw] meat. There are several different brands of lump crab meat; I look for wild-caught, hand-picked, and cooked at sea, if possible.
Once my ingredients were gathered up, we headed home & I threw together this delicious Spicy Crab Bisque. From start to finish, it only took about 45 minutes (and that includes all the cathartic veggie chopping). So, the next time you’re craving crab, by all means, check this recipe out; you won’t be disappointed.
Oh, and what did the kids eat? Lunchables.
